Grilled Chicken Thighs
Ingredients:
6 pieces trimmed chicken thighs
Grilled chicken rub (1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp ground coriander, 1/2 tsp sumac)
Directions:
- Heat up grill to 350 degrees
- Season the chicken with the grilled spice blend
- Cook the pieces, 8-9 minutes on each side or until internal temperatures measure at least 165 degrees.
Bow Ties with Chicken and Broccoli (from the Skinnytaste recipe)
I replaced the Orecchiette with elbow macaroni and the chicken sausage with ground chicken.Why? Because that’s what I had on hand. All other parts of this recipe remained the same.

Ingredients:
1 large English cucumber
1 large carrot
2 tbsp dill, chopped
salt and pepper (to taste)
Directions:
- Spiralize the cucumber and carrot
- Add dill, salt and pepper.
- Let salad chill for 30 mins-1 hour.
- Enjoy!
Easy Chickpea Curry
I created this recipe by myself. I love chickpea curry, but find that most curry blends are too spicy for me. So I decided to make my own. I started with Alton Brown’s Curry Powder blend and adjusted the level of heat for my own preference.
Ingredients:
2 tbsp coconut oil
1/2 onion, chopped
4 garlic cloves, chopped
2 tbsp tomato paste
1/2 cup coconut milk
1 (15 oz) can Chickpeas, drained
Chopped cilantro and yogurt (to garnish)
Directions:
Heat up the coconut oil and add the onion. Allow it to soften, 3-4 minutes. Add the garlic and cook until fragrant, 1 minute. Add the tomato paste and cook until it melts into the mixture. Add the coconut milk and mix to combine. Add the chickpeas and cook for 5-10 minutes (the mixture should thicken up).
Top with cilantro and yogurt and enjoy!
Homemade Chocolate Chip Cookies

These ended up being the best chocolate chip cookies I’ve ever made and I credit this to my new Kitchen-Aid Mixer. It was the first time I made them using the mixer. These cookies are in no way a healthy alternative. I only wanted a few and the extras I usually take to work with me for my co-workers to enjoy.
Tip: if you want delicious soft-baked cookies, store them in an airtight container with a piece of bread for at least 12 hours. The bread will become stale, but the cookies will soften.
Apples Slices with Peanut Butter Yogurt Dip
Ingredients:
3 apples, sliced
4 tbsp Greek yogurt
2 tbsp peanut butter,
2 tbsp raw agave
Directions:
- Melt the peanut butter in the microwave (30 seconds will do the job).
- Combine with the rest of the ingredients and enjoy!
