Sundays are cooking days for me. If I don’t have anything else planned, I take the day to food shop and meal plan for the rest of the week. This is essential for healthy living because it eliminates any opportunities for weak moments. If I get home absolutely ravenous, there is always something available in the fridge. It’s always healthy, it’s already prepared, and it is delicious!

This Sunday was no exceptions. On average, I make about 7 dishes. Some turn out better than others and I wanted to share them with you.

Among what I made this week was

  • couscous crab cakes with a lite Cole Slaw,
  • turkey ham stuffed chicken roulettes with sauteed mushrooms and onions
  • succotash, and
  • RPM fruit punch.

Ingredients:

1 can (12 ounces) Cannelini beans
1 can (12 ounces) sweet corn
1 large tomato, diced
1/2 red onion, diced
1/2 cup cilantro, shredded
Lime juice, to taste*
salt & pepper

  1. Combine all the ingredients
  2. Enjoy!

*You have the freedom to control the tartness with how much lime juice you put in. Start with 2 tablespoons and go from there. Remember that lime juice can sometimes overpower the entire dish, so add it slowly. It’s always easy to add more, but nearly impossible to take away.

This super easy recipe is a burst of flavor in your mouth. You get the mild flavor from the beans, a sweetness from the corn, and a tartness from the tomatoes and lime juice.

Top with canned tuna and you’ve got yourself a full meal!
